Seafood market serving up fresh, Florida fish

“My daughters Mackenzie and Delaney grew up in the Caribbean, diving and fishing,” Brock said. “Since they could walk they could dive. We’d spend a whole Saturday sailing to the Bahamas and then head back home to Florida with fresh fish for dinner.”

Because of his passion for fresh fish, Brock decided to open Big Mac and Little Lu’s Seafood Market and Grill. Big Mac is named after Mackenzie, who is an avid softball player and power hitter and Lu is named after Delaney, who Brock says always carried around a Lulu doll.

After Brock sold his lumber distributing business in Florida two years ago, the family moved out to Colorado and began their new business venture. Big Mac and Little Lu’s officially opened on Feb. 21 in Westminster.

“I wanted to start a company where all of us could be together,” he said. “We opened a map and decided on Colorado, even though we had never been here before. Then we found the place in Westminster and everything fell into place.”

While living in Florida, Brock met many boat captains, who now fish for him on a regular basis. He opened a packaging facility in Florida and employs one person who buys fresh fish from the captains every day.

The fish is put on ice and sent overnight, ending up in Colorado at 9:30 a.m. the following morning. Brock didn’t even buy a freezer for his restaurant because he believes in only serving and selling the freshest fish possible.

“The fish swims today and is here tomorrow. I want to introduce new species of fish that people in Colorado aren’t typically used to like hogfish and yellowtail snapper,” he said. “Not only do we want to have the finest seafood, but also have a Caribbean atmosphere. A place where Jimmy Buffet meets Bob Marley meets Kenny Chesney, a place all three would want to eat.”

For those people who want to make their own Caribbean fish at home, Brock is also providing all of the recipes for every dish served in the restaurant. Even the fruits and veggies on the plate are available for purchase. Brock said people can literally walk to the market, buy all the ingredients, and build the same exact meal they had in the restaurant.

“It’s our way of educating people about the fish we love to eat,” he said.

When Lennon Villarose was hired on as the executive chef, she was behind the fresh fish idea.

“The Caribbean thing is a lot of fun, I had to do a lot of research because we want to really be true to what it is and be very traditional,” she said. “But also make it palatable for people in Colorado. It’s been fun and I get to be really creative with it.”

As the Brock family begins their new adventure in the mountains, leaving behind the ocean, everyone couldn’t be more excited. Mackenzie and Delaney are delighted to finally see their nicknames on the wall and Brock’s wife Ashley is happy to be on stable ground, the Texas-native isn’t a big fan of the water.
